Monday 4-29-2013:

Pizza Night: This evening I made Pizza for the kids.  We had pepperoni and spinach pizzas along with bruschetta, spinach salad, and rotini with Alfredo sauce.

To began with I made four pieces of bruschetta:
-slice french bread into pieces 
-brush bread pieces with olive oil and chopped garlic
-brown bread under broiler (watch out - I started with 5 pieces burnt one and ended up with four)

Once toasted remove and layer with parmesan cheese, tomato slices, and mozzarella cheese.  Return to the oven and leave until the cheese melts.  Serve as an appetizer.

  


My wife, Teresa, is a very busy person she:
-runs the accounting for our family business
-home schools our children
-works on State-wide political campaigns
-spends weeks on end at the State capital as a citizen lobbyist
-and many other things...

This means that if the kids want to get fed I'm going to have to do some of the cooking.  In this blog I'll post some of my recipes - good and bad - for others to try.  This is mainly just for fun and I hope that some of you will be able to try some of these.
